The Effects of Enzymes, Species, and Storage of Raw Material on Physicochemical Properties of Protein Hydrolysates from Whitefish Heads
In this study, the heads of four different species of whitefish were processed via enzymatic hydrolysis, namely cod (Gadus morhua), cusk (Brosme bromse), haddock (Melanogrammus aeglefinus), and saithe (Pollachius virens), using three commercially available enzymes. Trials were conducted after 0, 3, and 6 months of the frozen storage of heads. A proximate chemical analysis, molecular weight distribution, and protein solubility were evaluated for each of the products.

Neste estudo, as cabeças de quatro espécies diferentes de peixes brancos foram processadas por hidrólise enzimática, nomeadamente bacalhau (Gadus morhua), bacalhau-alasca (Brosme bromse), arinca (Melanogrammus aeglefinus) e zarbo (Pollachius virens), utilizando três enzimas comerciais. Foram realizados ensaios após 0, 3 e 6 meses de armazenamento congelado das cabeças. Para cada um dos produtos, foram avaliadas a composição química aproximada, a distribuição do peso molecular e a solubilidade proteica.
