Smoked turbot debuted at Blue Wink-E
The product is the result of a collaboration between Flatlantic and the startup Fumeiro do Mar
In addition to round tables and discussions on the link between the blue bioeconomy and the consumer, Blue Wink-E 2024 was marked by a unique gastronomic experience that combines tradition and innovation in the blue bioeconomy: the debut of smoked turbot.
This innovation is the result of a collaboration between the aquaculture company Flatlantic, which specializes in producing high-quality turbot, and the start-up Fumeiro do Mar. Combining tradition and innovation, the two companies have created a product that combines artisanal knowledge with the process of smoking oak, fig, and orange trees, giving the fish a distinctive and exquisite flavor.
To showcase this special smoked turbot, B2E CoLAB offered an exclusive tasting as part of the official Blue Wink-E 2024 program. During the Blue Connect networking break, participants were able to try two tapas designed to highlight the unique flavor of this turbot:
- Atlantic Toast: A dish that combines smoked turbot with cucumber and dill sauce, offering a touch of freshness and smoothness that highlights the profile of the smoked fish;
- Sea and Land in Candy: A fusion of rice with smoked turbot and nori seaweed, representing the connection between the flavors of the sea and the land, highlighting the creative potential of this innovative product.
This gastronomic moment, part of the event’s theme “Choose Blue, Live Green”, not only demonstrated the commitment to sustainability and the quality of Portuguese aquaculture but also allowed participants to evaluate the smoked turbot, providing essential feedback to improve the product and its positioning on the market.
The smoked turbot symbolizes the advance of the blue bioeconomy in Portugal, sustainably transforming marine resources and presenting itself as a promising bet for national gastronomy. It also highlights the quality and sustainability of Portuguese aquaculture.
