In addition to round tables and discussions on the link between the blue bioeconomy and consumers, Blue Wink-E 2024 was marked by a unique gastronomic experience that combines tradition and innovation in the blue bioeconomy: the debut of smoked turbot.
This innovation is the result of a collaboration between the aquaculture company Flatlantic, which specializes in the production of high-quality turbot, and the startup Fumeiro do Mar. Combining tradition and innovation, the two companies have created a product that combines artisanal knowledge with the oak, fig, and orange tree smoking process, giving the fish a distinctive and refined flavor.
To showcase this smoked turbot in a special way, B2E CoLAB provided an exclusive tasting, which was part of the official Blue Wink-E 2024 program. During the Blue Connect networking break, participants were able to try two tapas designed to highlight the unique flavor of this turbot:
This gastronomic moment, part of the event’s theme “Choose Blue, Live Green,” not only demonstrated a commitment to sustainability and the quality of Portuguese aquaculture, but also allowed participants to evaluate smoked turbot, contributing essential feedback to improve the product and its market positioning.
Smoked turbot symbolizes the advancement of the blue bioeconomy in Portugal, transforming marine resources in a sustainable way and presenting itself as a promising investment for national gastronomy. In addition, it highlights the quality and sustainability of Portuguese aquaculture.
