In addition to round tables and discussions on the link between the blue bioeconomy and consumers, Blue Wink-E 2024 was marked by a unique gastronomic experience that combines tradition and innovation in the blue bioeconomy: the debut of smoked turbot.

This innovation is the result of a collaboration between the aquaculture company Flatlantic, specializing in the production of high-quality turbot, and startup Fumeiro do MarCombining tradition and innovationthe two companies have established a product that combines artisanal knowledge with the process of smoking oak, fig, and orange wood, giving the fish a differente taste and refined.

 

To let people know about this one pinned smoked in a special way, in the B2E CoLAB provided a exclusive tasting, which was part of the official Blue Wink-E 2024 program. During the Blue Connect networking break, participants were able to try two tapas designed to highlight the unique flavor of this turbot:

  • Toast Of The Atlantic: A dish that combined smoked turbot with cucumber and dill sauce, offering a touch of freshness and smoothness that enhances the profile of the smoked fish;
  • Sea and Land in Bombom:: A fusion of rice, nailed, and smoked seaweed norito represent the connection between the taste of the sea and the land, highlighting the creative potential of this innovative product.

This is the moment when food is inserted into the theme of the event “Choose From A Blue, Live Green, not only demonstrated a commitment to sustainability and quality in Portuguese aquaculture, but also allowed participants to evaluate smoked turbot, contributing to feedback essential to improve the product and its positioning in the market.

Smoked turbot symbolizes the advancement of the blue bioeconomy in Portugal, transforming marine resources in a sustainable way and presenting itself as a promising investment for national cuisine. In addition, it highlights the quality and sustainability of Portuguese aquaculture.
