In addition to round tables and discussions on the link between the blue bioeconomy and consumers, Blue Wink-E 2024 was marked by a unique gastronomic experience that combines tradition and innovation in the blue bioeconomy: the debut of smoked turbot.
This innovation is the result of a collaboration between the aquaculture company Flatlantic, specializing in the production of high-quality turbot, and startup Fumeiro do Mar. Combining tradition and innovationthe two companies have established a product that combines artisanal knowledge with the process of smoking oak, fig, and orange wood, giving the fish a differente taste and refined.
To let people know about this one pinned smoked in a special way, in the B2E CoLAB provided a exclusive tasting, which was part of the official Blue Wink-E 2024 program. During the Blue Connect networking break, participants were able to try two tapas designed to highlight the unique flavor of this turbot:
This is the moment when food is inserted into the theme of the event “Choose From A Blue, Live Green, not only demonstrated a commitment to sustainability and quality in Portuguese aquaculture, but also allowed participants to evaluate smoked turbot, contributing to feedback essential to improve the product and its positioning in the market.
